Hello jen! May I introduce myself and Matthew!!! ;D
We have had guinea fowl for several years now! We usually hatch ours in our incubator, and rear them ourselves. It is true, they only breed late in the year/ earlie in the year (any where between sept/oct to dec/jan).
They are also not like chooks, in that they love to wonder! We have sold them to many wineries etc as a means to keep insects at bay. But they will wonder far and wide durin breeding season (and also sometimes not durin), and they love to fly! and can fly well. They will sleep up the top of your highest tree if they can! This keeps them safe from foxes etc, but when the hen sits on her eggs, they often get picked off by a fox etc then. We now cut our hens wing and lock them up for the breeding season (we have lost too many this way).
When you first get them, you will need to lock them up for about 4 to 6 weeks, so that they earn their new home and stay there. They can be noisey at times, but not all the time. They are great birds! Very interesting to watch!
We have both the normal (grey) and the lavender (silver) mutation.

Peter pretty much covered it all there Jen. If you do get some let us know about ages, etc and any questions you have, I have learned the hard way for about 10 years now since I first got some and know a fair bit about them now.
